Base Ingredients:

  • 🐖 3 lbs Pork Shoulder
  • 🍈 1½ lbs Tomatillos
  • 🧅 1 lb Onion
  • 🌶️ 2 Anaheim Chilies
  • 🌶️ 1 Jalapeno
  • 🧄 4 Garlic Cloves
  • 🛢️ ¼ Cup Olive Oil
  • 🔲🧂 1½ tbsp Salt
  • ⬛🧂 ¾ tbsp Pepper
  • 🧄 1 tsp Garlic Powder
  • 🌶️ ¾ tbsp Chili Powder
  • 🌱 ¼ tsp Cumin Powder
  • 🌿 ¼ tsp Mexican Oregano

Scaled-up Ingredients:

  • 🐖 15 lbs Pork Shoulder
  • 🍈 7½ lbs Tomatillos
  • 🧅 5 lbs Onion
  • 🌶️ 10 Anaheim Chilies
  • 🌶️ 5 Jalapenos
  • 🧄 20 Garlic Cloves
  • 🛢️ 1¼ Cups Olive Oil
  • 🔲🧂 7½ tbsp Salt
  • ⬛🧂 3¾ tbsp Pepper
  • 🧄 5 tsp Garlic Powder
  • 🌶️ 3¾ tbsp Chili Powder
  • 🌱 1¼ tsp Cumin Powder
  • 🌿 1¼ tsp Mexican Oregano

Instructions:

  1. 1. Start by marinating the pork shoulder with olive oil, salt, pepper, garlic powder, chili powder, cumin powder, and Mexican oregano. Let it sit for about 30 minutes.
  2. 2. While the pork is marinating, roast the tomatillos, Anaheim chilies, jalapeno, onion, and garlic until they are slightly charred and tender. This will add depth of flavor to your Chile Verde.
  3. 3. Once the roasted vegetables have cooled slightly, blend them into a smooth sauce.
  4. 4. Heat olive oil in a large pot and brown the marinated pork shoulder until it's caramelized and cooked through.
